Preparation
This rosé is a Malmsey game, a wine obtained with the coupage of red and white malmsey. The grapes are picked by hand and in boxes.

The white and pink malvasia are harvested and processed separately.

Low-yield, gentle pressing to minimize extraction and preserve acidity in white malvasia. Destemming and maceration of the pink malvasia to extract color.

Mix of musts before fermenting. Fermentation at a controlled temperature of 16ºC in a 700 liter bocoy from Burgundy.

Aging
In French bocoy for 4 months.

Natural clarification
In barrels by gravity

Production
1200 bottles.

Tasting note
The characterful copper-colored, pale and cloudy rosé 2020 Tardatio Sutil Rosé was produced with Malvasía Rosada and Malvasía Blanca. It has a meaty nose and hints of iron and blood, with a serious and austere palate with 12.5% alcohol and 10 grams of acidity (sharp!) but balanced and harmonious, with personality and potential to age in bottle. It fermented and matured in barrels for four months, but there's no trace of oak. It's expressive and different, with pungent flavors and a long, tasty finish, with a chalky and salty twist. A very different rosé of strong personality.
